Development was originally with Aspyr, who had made the mobile ports or KotOR 1 and 2, along with some help from Saber Interactive. Both are owned by Embracer Group, with Saber being a direct subsidiary of Embracer while Aspyr was bought by Embracer and placed within Saber in 2021.
A few months ago several key people within Aspyr... um... decided that they wanted to spend more time with their families and moved on to pursue new and exciting opportunities as far away as possible from the Embracer Group, which wishes them well in their future endeavors. That's the source of the "KotOR Remake Is Doomed" headlines.
Embracer then announced that Aspyr's parent company Saber Interactive would be taking over development. They had previously been working with Aspyr so it shouldn't be too huge of a shock. The ownership of the game hasn't changed, just the people working on it.
Now, I have no inside information on how these two studios operate or what their culture is like, but at least there won't be battles over ownership of IP, licenses, or any of that which has doomed other games in the past.

Jade Empire is the reason that KotOR 2 exists.
That is, the sequel was going to exist anyway, but Lucas Arts wanted Bioware to make it. Since Bioware was busy making Jade Empire they passed on it and Obsidian got the job instead.
