Hi, I think self rising flour would be a good alternative to ap flour and baking soda! Canola oil or vegetable oil are both fine😊

Ingredients: 4 pcs ripe bananas (mashed), 1 egg, 1/2 cup oil, 1 tsp vanilla essence, 1 1/2 cup ap flour, 1/2 chp sugar, 1 tsp baking soda (or 3 tsp baking powder), 1 tsp salt, 1 tsp cinnamon powder, 1 cup semi sweet choc chips
Directions: (I doubled the recipe and was able to make 2 ceramic pans of banana choc chip loaves)
- Preheat oven to 330F.
- Combine everything in order until fully incorporated.
- Place in baking pan lined with parchment paper for easy clean up. Top with few choc chips on top before baking
- Bake for 50mins or a bit longer.

Makes 8pcs
Ingredients: 2 cups flour, 1tbsp baking powder, 1 tsp garlic powder, 1 tbsp sugar, 1/2 tsp salt, 1/2 cup cold butter (cut into small cubes), 3/4 cup milk, 1 cup shredded cheddar cheese, 1/2 cup diced ham (thinly sliced ones at deli), 2 tbsp parsley flakes
Directions: (preheat oven to 425F), line baking sheet with parchment paper, set aside.
-
Combine flour, baking powder, garlic powder, sugar, salt in a bowl
-
Add the cold butter pieces to the flour mixture. Crumble together until butter is fully incorporated with flour (grainy texture)
-
Add the milk to flour mixture. Combine everything until you form a smooth dough. Then add ham slices, shredded cheese and parsley. Combine again.
-
Put the dough on a floured flat surface. Press the dough down with your palm until its half an inch thick. Cut into equal 8 pizza like shape or wedges.
-
Put the wedges on baking sheet, put more cheese on top and sprinkle some parsley on top as well before baking (optional)
-
Bake for 18 mins. Serve warm.

Dont add too much flour though! Just continue mixing for low for avour 3 to 4 mins then switch to high speed for 7-8 mins until dpugh is not sticking on the bowl. Then do the windowpane test to check the gluten development😊
