I have always wondered this and I feel like it would be a lot easier to just show the email instead of blurring it out or use some sort of anonymous email system like craigslist so if you found an activation locked iPhone or bought one secondhand you could just email the owner and they could remove the apple id from the device. Why is this?

I mean it’s pretty simple; if it’s activation locked it’s more than likely stolen and the owner would probably want the phone back and not remove their Apple ID from it so the person who’s stolen it can either use it themselves or sell it in a useable state.

well maybe they could just use the contact info to get the phone back to them if spmeone finds it

If i am not mistaken they can use “find my” and enable lost mode so you can contact them in case you find a lost phone.

Providing an apple id (email) to an unknown person might be exactly what they need as a first step to hack into someone’s account. Or with some brute force they can even lock the owner’s account that is a huge headache.
