It is a lot of oil, but I have to admit the presentation looks good.
For balance, I would serve this with a plate of bread for dipping.

Your aren't wrong. I was trying to show co-workers and customers that you could produce good looking food with items in the shop, and I didnt have a small enough spoon to scoop of the pesto from the jar.

Fair enough, the steak does look like it has a good char. Maybe give it a slice next time so we can see dat cook.

Noted, Ill keep it in mind next time I have to remind myself i do actually know how to cook.

Nice, be sure to post it.
I am curious though, was it a medium or medium rare ?
Thewhimsicalsteve OP t1_jc2j0wd wrote
Came out to a very nice medium.

Oooosh, I do like a medium. Medium-rare is my go to but can't say no to a medium really

I had to help customers in-between cooking it so my timing got a little off

Yep, perfect for some garlic bread

looks like the steak would be overpowered with that olive oil flavor. less of a pesto and more of an oil soup. also i’ve never been one for whole sprigs as garnish, the thyme doesn’t do much for the presentation imo. Steak looks nice though!

Not being disrespectful..to each their own. I would prefer a chimichurra !

None taken lol. Chimi would have been better but I was kind of limited in my selection at my butchershop.
