The Borgias. The chain shot scene in S1E8 (The Art of War) is a jaw dropper.
Spartacus was a bit before middle ages but I get ya. Battle of the Bastards for me probably
Weak answer, but Vikings Valhalla is way better than it deserves to be.
How is that show? It's been on my list for a while.
Answers so far have all been historical, though I'd suggest the future has some good ones too (the expanse). But I'm struggling to find examples of fully pitched contemporary wars. I can think of some really cool military style opps scenes but no full fledged army on army, multi battle, out and out "wars"

Dark comedy. Solid action. Excellent show.
Aside from maybe Rome, I think you got all of the best shows with historical battle.
If you're looking for more Modern, Band of Brothers, The Pacific, and The Walking Dead include several.
If you're looking for sci-fi/futuristic, Star Trek, The Expanse, Battlestar Galactica, Star Wars: Rebels.
Kingdom is a Korean period drama where you have a small band of humans fighting hordes and hordes of zombies.
The 100 includes some large scale battles especially in the first few seasons. Sci Fi and set in the future tho but kind of medieval like battles
