I get what you’re saying, but they call their food “funky fresh cal mex” and their bread-and-butter is Mission style burritos.

I hear you but being from there and that's my primary cooking style, I have to explain that white queso is Tex Mex and our food uses cotija cheese. Just because it's in an oversized tortilla, doesn't make it Cali style. Chipotle does that, too

Mad mex doesn’t serve white queso. They serve beer cheese dip, and use either cotija or Monterrey jack on their burritos.

I didn’t say it was good Cal Mex, but that’s definitely what they’re going for, not Tex Mex.
