I didn't get Taylor Jersey Pork Discs but ShopRite thin & tangy, 6 slices. Occasionally you get a 7th slice but it's a pretty rare occurrence.

My husband and I got the 7th slice 2 weeks in a row and thought we hit the jackpot 😂 didn’t hit it 3 weeks though.

Shop rite brand, as I understand it, is made by Case.
You could grab a log of the stuff and slice it how you like.

For next time, just brine it. I had a 20lb bird that was still pretty solid Wednesday morning. Immerse the bird in a big pot with .5lbs of salt and brown sugar each plus some warm but not hot water, then throw it in the fridge. It'll thaw much faster.
