I wouldnโt say difficult, takes a bit of time. And I know itโs not what is typical of beef Wellington itโs supposed to be done in one tenderloin, but I cut it up into two to make individual ones because I find wrapping those easier, all the same ingredients though.

You can defo bring the meat out for an hour or more before the oven, helps with that ultra pink center.

You need a big slab to make it a wellington, slices are intended to served face up with the shrooms/ham/pastry containing the juices. That's like saying you can make chicken Kiev with half a breast. Enjoy your cooking and be happy, but it's not a wellington
