I don't know, I mean it's something that they do. My daughter told me it's kind of popular on social media right now. It was super good. It might be that their soft serve is insanely good. But that little bit of salt and that funky olive flavor really made it.

Finishing salt is meant to be put on the finished dish, as the name implies, whereas salt is usually added before or during cooking to enhance the flavor of a dish. While a well seasoned dish might not taste salty, when you use finishing salt you want to really taste the salt distinctly and it tends to come in larger, crunchy flakes to enhance texture too.

Nope. Finishing salt would not be as effective at seasoning a dish, and the coarse kosher salt I use to season a dish would not be as good for finishing. I get that you want to write it off as just wanky and expensive but maybe have an open mind. I use Maldon salt when I want to really emphasize the salt flavor (usually to offset/compliment sweetness) and add a very specific bit of crunchy texture to a dish. It’s expensive but you use very little of it.

I use Maldon salt too. It’s the “finishing” name which is wanky. But then again 99.999% of social media is about showing off these days so…makes sense.

It's literally what the restaurant calls it. I'd never even heard of finishing salt. Whatever, I'm not after karma. Just like to share and see people's comments.

It was $8, but for some reason the bartender comped me. I guess cuz we had a nice long chat about food. It's still cost me 60 bucks, two beers pizza side of kimchi and they build the tip in automatically which I kind of like.

Pizzeria Lola in Minneapolis. Had the Korean barbecue pizza with a side of housemade kimchi. Absolutely outstanding. And this combination of olive oil and salt on soft serve is a revelation.

Just saw this place featured in an episode of Chef's Table on Netflix. After watching, it's definitely on my list of places to go someday.

Definitely recommend the whole series to any pizza lovers.

Exactly why I went, in Minneapolis for work. Went back again tonight, had the forager with sausage. Absolutely ridiculous.

Thank you, I actually went back again tonight with a co-worker. Sat at the bar and drank dark pilsner and ate more pizza. Tomorrow night ramen somewhere.
