Not too gamey? I prefer my red meat rare but i find elk to be way chewy if under 140ish.

Personally I don't find it very gamey, especially when compared to venison or lamb or goat. But yes it can get chewy when rare. I prefer it as such, but I've had it more cooked than this and it's just as delicious.

Marinating it is the way to go. Makes some good carne asada tacos.
But in all honesty it doesn't have to be too chewy even when quite red
