I worked summers at a seafood restaurant in Maine. If this lobster stew is anything like ours was, the red is a very substantial layer of lobster flavored butter floating on top. Much whiter/pinker dairy base underneath.

The Log Cabin on Bailey Island, ME where I grew up πŸ˜… It’s solely a B&B now but was a restaurant and I worked summers from 94 to 97 or so.
