Teams attaches the transcript to the meeting chat, and tells everybody you're recording a transcript.
Not sure if Google does this.
I don't see it as a big deal. People transcribe and make notes of meetings. This just automates that process.

I hate this headline. It's literally a feature of Google Meet. Haven't used it there but used the same thing in Teams and honestly it's useful with meetings where you have action items since you don't need to write them down and can literally search the notes for whatever later.

In my line of work, it's been a godsend that remote meetings have become normalized, and I can sit and type notes while I interview people. I've thought about using these tools, because it would help even more to be able to literally reread what they said when I forget, but I'm also hesitant because I feel I'd need to tell the other person and that might have a cooling effect on the conversation. It's much less of an issue in a large meeting, but for one-on-one stuff I wonder how it is received.
I have a bad memory and slow to take notes, it would be so freeing to be able to just focus on the conversation and know it's being captured. Ugh I should just do it.

I totally get your point with that, I think maybe they will go in the direction of putting a disclaimer on the call saying that notes are being taken like when you phone a company up they have to let you know that all calls are recorded.

This is why if I want to have an "Off The Record" conversation with a coworker, I drop off MS Teams. It's best practice to assume every call you have on company assets are recorded, even if they are not.
